Ask a Brewer: Full Sail’s Jamie Emmerson

Full Sail has been around for 28 years and now distributes to 31 states. They’re best known for Full Sail Amber and their Session Lagers, which have won numerous awards. Executive brewmaster Jamie Emmerson answered our questions.

What’s special about your brewery?

We brew traditional styles with NW ingredients sourced within 100 miles of our brewery. We’ve also won more than 350 medals, including more than 200 golds. Also, we’re super green.

What’s your least favorite part of the brew day?

Is there a bad part of making beer?

What is your favorite part of the brew day?

The smell of the first kettle boil…..Awesome!

What was the biggest mess you’ve made making a beer?

I pulled the wrong clamp off of a fermenter…. mega beer bath.

What’s the largest batch of beer you’ve poured down the drain?

We operate a full time lab with 3 people, so we’re always on top of our ferments and cleaning. No worries about contaminations.

What’s your favorite beer festival?

Oregon Brewers Fest.

Have you shared, or are you willing to share, a homebrew clone recipe for any of your beers?

Yes, we shared an Amber Ale clone.

What’s the strangest ingredient you’ve added to a beer?

I’m all about the big 4: water, malt, hops, and yeast.

What was your happiest moment as a brewer?

I’m always pleased when I see our 6 packs in someone’s shopping cart.

What dumb joke are people always making about your job?

Where’s the free beer?

What beer should be served at your funeral?

A big malty Maibock
